Warner Chili
A descendant of McCorkle chili1.
Ingredients
- olive oil
- 1 yellow bell pepper, chopped
- 1 green bell pepper, chopped
- 1 small onion (1/4-1/2 cup), finely chopped
- 3 cloves of garlic, minced
- 2 28oz cans of diced tomatoes
- 2 tbsp nutritional yeast
- 1 can black beans, rinsed
- 1 can kidney (or other) beans, rinsed
- 1 can corn (or other beans), rinsed
- 1 tbsp chili powder
- 1 tbsp cumin
- 1 tbsp paprika
- 1/2 tsp salt
- 1 tsp ground cayenne pepper
- 2 tbsp tomato paste
- 1 cup TVP
- 1 to 2 cups water
Directions
- Warm oil in sauce pan on medium-low heat, add peppers and cook for five minutes.
- Add onion and cook until it is translucent.
- Add garlic and saute for a minute or two.
- Add spices and combine well, but briefly.
- Add the rest of the ingredients, bring to a boil, and then simmer, the longer the better.
Serve with a couple handfuls of corn chips and sliced avocado on top.
1The biggest differences appear to be that McCorkle chili used cream corn and did not include nutritional yeast. There were also no corn chip or avocado toppings.
